Hello, I have doubt of the correct configuration nginx Fastcgi cache, I have several single server sites, I have to activate nginx Fastcgi cache and then Redis or not? Only activate Nginx Helper with nginx fastcgi active cache option? Thank you!

The short answer is YES, you have to activate both.

FastCGI is for page cache and Redis is for Object cache. Nginx-Helper plugin have support to use redis for page cache, but Webinoly doesn't support this option

Why Webinoly does not support Redis for Page Cache?

This option is not recommended and in fact, you won't see any benefits, unless you have a multi-server setup behind a load balancer.

Yes, everything seems just fine.

Just be sure that Nginx-Helper purge method is set as "Delete local server cache file" and customize the purging conditions according to your needs.
